Ch - Ch - Ch - Chia Seed Pudding


One of my favorite on-the-go breakfasts for workdays, pre-WFH vibes..

I love to prep this and keep it in my fridge for a quick and easy, grab-and-go type of snack or breakfast item. It is also a great way to re-purpose your empty pasta or jam jars that you may have laying around.


Chia seeds are THE RICHEST PLANT SOURCE of omega-3 fatty acids and are actually a complete source of protein, containing all nine essential amino acids that cannot be made by the body !!


The ELITE ratio:

- 1/2 cup almond milk

- 2 tbsp chia seeds

- dash of cinnamon

- 1 tbsp maple syrup

- fruit toppings of choice (I used strawberries and pineapple here, but you could use really any fruit you have on hand)

*for a boost of protein I like to add a tbsp of peanut or almond butter on top


HOW to assemble:

- In a jar or bowl, mix chia seeds with milk of choice, maple syrup and cinnamon.

- Cover and let sit in the refrigerator overnight

- Top with fruit and nut butter and enjoy
