Fun fact: figs are native to the Mediterranean and were held in such high regard by the Greeks that laws were once created to prevent their export. Not to bore you with the details of my childhood but I grew up picking figs off of my grandfathers fig tree in Cyprus, so figs hold a special place in my heart. I would eat far too many and suffer the consequences later (figs contain high levels of oxalates and an excessive amount of figs may have a laxative effect - #normalizepooptalk2020)
What you'll need for this recipe:
- 1 flatbread of choice (pre-made or frozen pizza crust will also do)
- 2 tbsp pizza sauce or tomato sauce
- 3-4 slices mozzarella cheese
- a handful of cherry or grape tomatoes
- 1 bunch arugula
- 2-3 small figs, sliced
- light drizzle of balsamic glaze
Directions:
- Preheat oven to 425 degrees
- Assemble your pizza or flatbread to your liking
- Cook for 8-10 minutes or until bottom of pizza crust is golden brown and crispy
- Remove from oven and let cool
- Drizzle with balsamic glaze to your liking and enjoy!
